Basil Mushroom Turkey Meatloaf

Here is another meatloaf I consider a “winner”.  It is very good and makes a great sandwich if you have leftovers!

Preheat oven to 350 F.

2 Tbsp. EVO
2 cups sliced mushrooms
1 onion, chopped
2 cloves garlic, minced
1 ½ tsp. dried basil
½ cup dried breadcrumbs (white or brown or a combination), preferably homemade**
2 Tbsp. freshly grated Parmesan cheese
2 green onions, chopped
¾ tsp. salt
½ tsp. pepper
1 egg, beaten
1 ½ lb. ground turkey
2 Tbsp. Heinz Chili sauce

 

In frying pan, heat oil over medium heat; cook mushrooms, onion, garlic and basil, stirring, for about 3 minutes or until softened.  Cool to room temperature.

In a large bowl combine crumbs, cheese, green onions, salt, pepper, egg  & onion mixture. Mix in turkey and press into a well greased 8 x 4” loaf pan; brush with chili sauce.

Bake for 1 hour and 20 minutes or until meat thermometer registers 175 F. Let stand for 10 minutes; pour off fat and slice.
