You could roast the pork in the oven or, my preferred method, on the barbecue. The pork can be used not only as part of an Asian meal but sliced and served as an appetizer, cut up for fried rice or fried Chinese noodles. I have also julienned the pork and filled wonton cups with finely shredded lettuce added the pork, topped with hoisin sauce & finely chopped green onions.
Makes 4 – 6 Servings
2 pork tenderloins, trimmed of any silverskin
¼ cup soy sauce
2 Tbsp. black bean sauce
1 Tbsp. hoisin sauce
1 Tbsp. packed brown sugar
2 tsp. whiskey (I use Scotch)
2 tsp. sesame oil
¼ tsp. five-spice powder(recipe below)
1 clove garlic, minced
½ tsp. cornstarch
Glaze:
1 Tbsp. vegetable oil
1 Tbsp. corn syrup
1 tsp. soy sauce
In a bowl, stir together soy, black bean & hoisin sauces, sugar, whiskey, oil, five-spice powder & garlic; add pork, turning to coat. Cover and marinate in the fridge for a least 8 hours or overnight, turning occasionally.
Remove tenderloin from marinade, reserving marinade. Place on a greased rack in roasting pan; let stand for 30 minutes at room temperature. OR preheat your barbecue.
Blend marinade with cornstarch; cook, whisking, over medium-heat for 1 – 2 minutes or until boiling & thickened. Remove from heat; brush half of mixture over pork. If roasting in the oven place ¼” water into the roasting pan. If cooking on the barbecue, place a drip pan under the grilling rack, adding ¼” water to drip pan. Roast pork in a 375 F oven for about 25 minutes until no longer pink inside, brushing halfway through with remaining marinade. If cooking on the barbecue, place the pork over the drip pan; cover with barbecue lid. The cooking time should be roughly the same. You can use an instant read thermometer (155 F) to test for doneness. Remove from oven or barbecue; place on a cutting board & let rest for 8 – 10 minutes before slicing.
Glaze: Combine oil, syrup and soy sauce; brush over pork & broil or place over coals for 3 – 5 minutes until pork glistens.
