This salad is so good. It’s refreshing and makes a great accompaniment to my barbecued Tandoori chicken. Grill up some naan and there you have it, a great summer meal full of south Indian flavours and aromas! But you don’t have to wait for summer to enjoy! Although summer tomatoes, as we know are the bomb!
Makes 4 Servings
Dressing:
¼ cup canola oil
2 Tbsp. white-wine vinegar
1 Tbsp. freshly squeezed lime juice
1 clove garlic, minced
1 tsp. Dijon mustard
¼ tsp. ground cumin
¼ tsp. each salt & freshly ground pepper
For The Salad:
4 Tbsp. mint or cilantro, chopped (if I use mint, I reduce the amount to suit our taste)
2 large tomatoes, halved and sliced, or halved cherry tomatoes
1 sweet onion, thinly sliced
1 7” piece of English cucumber, either left whole or halved lengthwise and thinly sliced
In a large serving bowl, whisk together the dressing ingredients except for the mint or cilantro; add sliced tomatoes, onion & cucumber; toss gently. Gently stir in mint or cilantro.
