Roasted Cherry Tomatoes

One of the highlights of summer are the tomatoes, fresh from the garden, or from your local Farmer’s Market. They are so sweet and luscious and yummy. This is my take on a Canadian Living recipe. It’s fabulous with chicken, barbecued Italian herbed ribs or Italian fennel sausages. Don’t forget some crusty bread to mop up all the juices!

Makes 4 Servings

4 cups of cherry tomatoes, halved
3 cloves garlic, minced
2 Tbsp. EVO
¼ tsp. each salt & freshly ground pepper
1/3 cup fresh breadcrumbs**
½ cup crumbled goat cheese
1 Tbsp. chopped fresh basil or oregano

My favourite version, uses small cubes of Provolone cheese & fresh chopped marjoram.

Preheat oven to 400 F.

Brush  a  9″gratin dish or 9” glass baking dish with EVO, toss together tomatoes, garlic, EVO, salt & pepper. Sprinkle with breadcrumbs; dot with the cheese. Bake until tender & wrinkled, about 35 –  45 minutes. Sprinkle with the chopped fresh herbs. Serve hot or warm.
