Corn On The Cob Butters

A couple of “compound butters”  to slather on fresh, fantastic, local corn!

Lime-Chive Butter

½ cup (4 oz.) unsalted butter, room temperature
1/3 cup finely chopped fresh chives
2 tsp. fresh lime juice
1 tsp. finely grated lime peel
½ tsp. fine sea salt
¼ tsp. Hungarian sweet paprika
Pinch of cayenne pepper

Mix all ingredients in a medium bowl. Can be made 2 days ahead. Cover & chill. Bring to room temperature before using.

Garam Masala-Lime Butter

1/4 cup (2 oz.) unsalted butter, room temperature
1 Tbsp. finely chopped green onion or chives
1 Tbsp. cilantro, finely chopped
1/2 tsp. finely grated lime peel
Pinch of sea salt
1/2 – 1 tsp. Garam Masala
Pinch of cayenne pepper

Mix all ingredients in a small bowl.  Can be made 2 days ahead.  Cover & chill.  Bring to room temperature before using.
