Cheese Burgers, Smoked Paprika Mayo, Roasted Peppers, Grilled Onions

Turkey Burgers With Cheddar And Smoked Paprika Mayo

Bring on the burgers!  A bit of the mayo is mixed into the turkey adding moisture and lots of great flavour! I don’t know about you but I love grilled onions and peppers on a burger!

Makes 3 or 4 Burgers

½ tsp. cumin seeds
½ tsp. coriander seeds
½ cup mayo.
2 Tbsp. EVOO + additional for brushing
2 tsp. freshly squeezed lemon juice
1 ½ tsp. smoked paprika
1 garlic clove, pressed
1 lb. ground turkey,  preferably dark meat or a mixture of dark & light
3 or 4 slices of red onion, sliced 1/3” thick
1 large or 2 small red bell peppers, quartered & seeded
4 slices white cheddar cheese
4 hamburger buns

(opt.) lettuce or arugula

In a small skillet, over medium-high heat, toast the cumin seeds and coriander seeds until aromatic and slightly darker in colour, shaking the skillet often, abut 1 ½ minutes. Cool. When room temperature, finely grind the seeds in a spice grinder, that is used only for grinding spices.

Whisk the mayo., 2 Tbsp. EVOO, lemon juice, smoked paprika, garlic and ground spices in a small bowl; season with salt and pepper.

Place the ground turkey in a bowl. Add 2 Tbsp. of the mayo and mix gently. Using damp hands, divide the turkey mixture into either 3 or 4 portions; form each into a patty. Don’t make the patty too thin or it might break up when you are barbecuing them. Using your thumb, make a small indent in the centre of the burgers (this will help the burgers to remain flat and not puff up in the middle).

Heat either a charcoal or gas barbecue to medium-high heat. Season the burgers with salt and pepper; toss the onion slices and bell pepper pieces with the oil; sprinkle with salt and pepper. Grill the onions and bell peppers until soft and charred, about 4 minutes per side. If you like, you can put a skewer through the onions to hold them together while cooking and turning them. Remove the veggies to a warm platter, keep warm in a 180 F oven while you grill the burgers.

Place the burger patties on the grill and cook for 5 minutes; turn over; grill until almost cooked through, about 4 minutes; Top each burger patty with 1 cheese slice and grill until the burgers are cooked through and the cheese melts; approximately 1 minute more.

Remove the patties to the platter with the veggies and keep warm. Grill the burger buns until lightly toasted. Spread some mayo. on the bottom of the bun; top with a burger patty, grilled red pepper pieces and grilled onions; top with a dollop of the mayo. and some lettuce or arugula if using; cover with the top of the bun and enjoy!
